Abstract

Brazilian agroindustry has stood out for its diversification and the search for adding value to primary production. In this scenario, guava paste stands out as a traditional product with strong cultural appeal, good market acceptance and potential profitability. Produced from guava, a fruit widely cultivated in Brazil, guava is consumed both locally and nationally and has aroused interest in the foreign market. This study aims to analyze the guava production chain in Brazil, with an emphasis on the viability of producing derivatives with pepper, an innovative combination that has been gaining ground in the gourmet food sector. The research was carried out based on secondary data from institutions such as Embrapa, IBGE, FAO and Sebrae. Brazil is one of the largest producers of guava, with emphasis on the states of São Paulo, Minas Gerais and Goiás. The fruit's production cost is relatively low, which favors its transformation into products with higher added value, such as sweets and jellies. The addition of pepper creates a differentiated proposal that is easily accepted in the gourmet market. The study shows that the manufacture of guava paste with pepper is technically viable and economically promising, with the potential to boost small and medium-sized entrepreneurs. Among the challenges are the need for effective marketing strategies and winning over consumers. It is concluded that investing in innovation, quality and differentiation can open new opportunities in the food market, strengthening the Brazilian agroindustry and generating value for the entire production chain.
